Hot Pepper Jam

This is my very first time making jam and canning!!

I tried red pepper jelly years ago and absolutely loved it.  It is delicious on a cracker with cream cheese... (drool!)
I looked up a few classic recipes and came up with my own.  You can see the recipes I referenced here and here (<=this one has great canning instructions)

Hot Pepper Jam
(makes 6 half pint jars)

Ingredients:

  • 1 pound hot peppers (red and/or green) I used Fresno Peppers (about 25-30 peppers)
  • 1 cup lemon juice (or cider vinegar)
  • 1 pkg. SURE-JELL No Sugar Needed Fruit Pectin
  • 1 tsp. coconut oil (or butter)
  • 4 Cups of Raw Organic honey

Directions:

  1. Wash the peppers, cut of the tops and discard the inside white parts and seeds.***
  2. Place the peppers and the lemon juice in a blender and pulse blend until mostly pureed with some small flecks of peppers left
  3. Place pepper/ lemon juice blend in 6- or 8-qt. saucepan.
  4. Stir in pectin.
  5. Add oil to reduce foaming.
  6. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly
  7. Stir in honey
  8. Return to full rolling boil and boil exactly 1 min., stirring constantly.
  9. Remove from heat.
  10. Skim off any foam with metal spoon.
  11. Ladle immediately into *prepared jars, filling to within 1/8 inch of tops.
  12. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands TIGHTLY.
  13. ** Process jars

VERY Basic Canning Directions:
*Prepare Jars:
Bring boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.

**Process Jars:
Place filled jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing centers of lids with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.)

***Handling any Hot Peppers
Protect hands with rubber gloves while preparing jalapeno peppers.
For hotter taste, leave in some of the seeds.

Cancer sucks!

Cancer sucks. Whether you are a healthy 71 year old with a newly diagnosed brain tumor, a 37 year old with pancreatic cancer, a 16 year old with a bone tumor, or a 2 year old with leukemia,... not to mention breast cancer, adenomas, lymphomas, granulomas, and skin cancers, and on and on.  Cancer sucks!!

Chances are that anyone you talk to has a loved one or friend touched by this disease.  There are different theories and some identified causes of different types of cancer, but in many cases the causes are unknown.  There are many conflicting ideas on what steps to take to prevent this disease but many reputable researches point to prevention by eating a healthy high fiber diet, regular use of sunscreen, moderate exercise, maintaining a healthy weight, limiting exposure to known substances that cause cancer,... the list goes on and on. Then you might find all kinds of conflicting information from "experts" online; eat certain foods, avoid certain foods, doing this, don't do that,...  Argh!  It can become very confusing and frustrating trying to sort through so much information.  You need to use some common sense and not fall for every new fad.  Do your homework and look at the research for yourself.

When it comes to actually treating any type of cancer, the same approach should be taken.  Read, learn, ask questions, seek out the experts and look at all the pros and cons, benefits and side effects, ask more questions.  Look at traditional treatments and experimental treatments, traditional medicine treatments and natural approach treatments. Find a health professional who will actually listen to you and value your input in choosing a course of action that you are comfortable with.
I always try to keep an open mind to more natural approaches to treating illnesses, and when it comes to issues of life and death, there is a certain time constraint and a sense of urgency, so I find that some people are open to trying new approaches and using what I like to call "Complementary Therapies". Some people call them Alternative Therapies, but that might give the impression that there is a choice to be made between one way of doing things and another.  Complementary, as in you can do this AND that, inclusive, at the same time to get the most benefit. So I do not discourage anybody from following the traditional approach to cancer treatment whether that is surgery, invasive tests, radiation therapy, chemotherapy,... but I encourage them to also look into other more gentle approaches.  Those range from a change in nutrition, dietary supplements, relaxation techniques, guided imagery, prayer, acupuncture, massage, use of herbs and oils,...
All of these complementary approaches have their benefits and a range of effectiveness that varies from person to person.  Their effectiveness can be subjective or objective, and their cost can vary from free to prohibitively expensive.  I like to think that I am a mostly rationally thinking person, so I love to see well done research and evaluate things on my own and form my own opinion on things.  That being said I do realize that everything is not known, and not everything can be measured, quantified and boxed up in neat logical package.
I have been reading, and learning and asking questions about essential oils for a while now. I have been applying what I learn to myself and those within my reach who are open to trying something different.  I come in contact with people who are in pain, or suffering every day.  Some have cancer, so I have looked into essential oils that might be beneficial for their particular conditions.  Using plants and plant oils is not a new fad, it's as old as humanity itself, with documented uses in the Egyptian and Greek cultures.  Most modern pharmaceuticals are derived from plants through chemistry.

A quick search of www.pubmed.gov that accesses the US National Library of Medicine and the National Institutes of Health for the words "complementary alternative cancer" yielded 2661 published articles!  The words "essential oil cancer" yielded 584 published articles.  Many of the plants and oils mentioned are not very easily accesible (yet), but one that came up time and time again AND if fairly easy to obtain is Frankincense.  The words "frankincense cancer" on the same site yielded 52 published articles.  You can do your own searches, just make sure that what you are reading is from unbiased sources.
Frankincense has been studied extensively and has been found to have pain relief and anti-inflamatory properties, improve anti-oxidant status, anti cancer properties, anti-tumor properties, improvement of osteoarthritis, reduces the intensity and frequency of headaches in patients with Cluster Headaches, treatment of inflammatory bowel disease, rheumatoid arthritis, osteoarthritis and asthma, peritumoral brain oedema, antimicrobial properties,...

You can look up many more studies here: http://www.ncbi.nlm.nih.gov/pubmed

Cancer does suck, but you can attack it from every angle possible for the best chances at preventing it and beating it!
