Coconut Flour Blueberry Muffins - Gluten Free/ Grain Free / Dairy Free/ Refined Sugar Free


I needed a sweet "bready" fix today and these were quick and easy and sure hit the spot!

Ingredients
  • 6 Tbsp melted coconut oil
  • 6 Tbsp organic raw honey
  • 6 eggs
  • 1/2 tsp GF vanilla extract
  • 1/4 tsp sea salt
  • 1 tsp GF baking powder
  • 1/2 cup coconut flour 
  • 3/4 cup fresh or frozen blueberries



Directions:
  1. Preheat oven to 400 degrees.
  2. Grease your muffin pan, or use silicon baking cups.
  3. Blend all ingredients with a fork or whisk. 
  4. Fold in the blueberries.
  5. Divide into 12 silicone or lined muffins cups.
  6. Bake for 16-20 min until a toothpick comes out clean.
  7. Let them cool a bit.
  8. Try to just eat one.
